A truly delicious dish where the sweetness of the figs perfectly compliments the saltiness of the cheese. Either leave the smoked Prosciutto off for vegetarians or add it if you prefer a meatier option!
Ingredients:
- 4 x large fresh & ripe figs- 100g smoked Stilton or 100g smoked goats cheese
- 1 x small packet walnut halves
- 1 x bag of your favourite salad leaves
- 4 x slices smoked Prosciutto (optional)
- Olive oil (preferably smoked olive oil) for drizzling
- Balsamic vinegar for drizzling
- Ground black pepper to taste

Prep time: 5-10 minutesCook time: 12-15 minutes
Serves: 4 people as a light starter or 2 people as a main meal
Method:
- Preheat the oven to 190°C/fan oven 170°C/Gas mark 5- Make a deep cross cut into the top of each fig
- Stuff an equal amount of Smoked Stilton or Goats Cheese into each fig
- Crush the walnuts on push them into the cheese
- At this stage, if you choose to use Prosciutto, then wrap a slice around each fig
- Place on a baking sheet and bake the figs for 12-15 minutes
- Remove from oven and serve with the salad leaves
- Pour any remaining juices from the baking tray over the figs
- Drizzle with balsamic vinegar and olive oil, & finish with a grind of black pepper to taste
